Anti-inflammatory Steamed Egg with Goji


If there were only one breakfast item I could eat for the rest of my life, it would be steamed egg. Eggs provide all essential amino acids for protein synthesis. It is rich in lecithin found to promote cognitive health. It has all the B vitamins responsible for energy and anti-stress. This is a simple way to incorporate complete protein found in eggs that would keep you feeling full and energized till lunch. Adding goji berries in this dish provides the anti-oxidants and carbohydrates making this a balanced breakfast that also fight free radicals. Including turmeric provide the anti-inflammatory properties that keep the digested tract calm. Steaming eggs makes them easy to digest, as it will melt in the mouth making this a staple dish during a flare-up. Choose organic eggs when possible to ensure the best quality of protein. Complete protein is necessary for building and replacing damaged intestinal lining.

Total Time: 15mins

Ingredients:
-       1 egg
-       1 tbsp goji berries
-       1 tsp turmeric
-       1 tsp soy sauce
-       1 tsp flaxseed oil (sesame oil)

Directions:

Crack open egg and place into a small bowl that can be used for steaming. Beat egg until smooth and add in turmeric and goji berries. Add ¼ cup of warm water to mixture and beat until smooth. Wait for water to boil and steam on medium heat for 10mins. After 10mins the eggs should have solidified to a cake-like consistency. Add in soy sauce, flaxseed oil to serve.

Omelette


Ingredients:
  • 2 organic egg 
  • 2 tbsp oil (olive, coconut) 
  • 1 tbsp salt 
  • 1 cup spinach, tomato, onions, peppers 
  • 2 tbsp nutritional yeast 
Directions:

1. Oil pan and heat till medium.
2. Add in vegetables as desired and stir for 3mins.
3. Beat 2 eggs add salt and stir in with the vegetables for 2mins.
4. Serve with nutritional yeast on top.

Omelette is a quick and simple way to add in the protein, fat and carbs into any meal. When adding the vegetables, choose ones that are hypoallergenic for you. (ex. tomatoes are part of the nightshade family that may not be ideal for someone with arthritic condition)
