Noodle Alternatives

A great way to enjoy noodle or pasta dishes for those who are gluten sensitive is through rice noodles like in Pad Thai or Buckwheat noodles. Like risotto it is an easy way to incorporate a variety of vegetables and flavours.

Buckwheat is gluten free contains a variety of minerals including magnesium iron and B6. It is a also a great grain protein source that contains all 8 essential amino acids. 








Serves: 2

Cook Time: 20mins
Total Time: 30mins

Ingredients:
-       1/2 cup soba / vermicelli noodles
-       1 cup vegetables (carrots, mushrooms, spinach, kale, tomato)
-       1 egg
-       2 tbsp. nut butter
-       1 tbsp. hoisin sauce
-       ¼ cup water (bone broth)
-       1 tbsp. coconut oil
-       1 tsp. of each turmeric, salt, pepper, fennel, cumin, coriander (cilantro)

Directions:

First, wash and chop vegetables into small pieces. Then, add oil and spices and heat up pan. Stir in vegetables and cook on high for 3mins. Add in bone broth when vegetables are almost cooked and simmer for 3min on low heat.


In another pot boil water and place noodles in for 3 mins once boiled remove and add noodles in with the vegetables to serve.
